                                                Italian meatballs in tomato sauce

Ingredients :

    SAUCE
    2 Cloves garlic, minced
    1/3 c Minced parsley
    28 oz crushed tomatoes
    1/2 c chicken stock
    2 T Sugar
    1/2 t Salt

    Meatballs
    1 lb Ground chuck
    1/2 c Freshly grated romano
    3 T Minced parsley
    1/2 t Salt
    1/4 c olive oil
    3/4 c Chopped onion
    2 T olive oil
    1 t Dried basil, crumbled
    6 oz Tomatoe paste
    1/4 c Dry red wine
    2 T Freshly grated romano
    1/2 t Oregano, crumbled
    2 Slices bread, soaked
    2 Large eggs, beaten lightly
    1 Clove garlic, minced
    1 t Dried oregano
    Ground black pepper

METHOD :

Sauce : In a heavy saucepan cook the onion and the garlic in the oil over low heat, stirring, for 2 minutes, add the parsley, the basil, the tomatoes, the tomato paste, the stock, the wine, the sugar, the romano, the salt and the oregano, and simmer the sauce, stirring occasionally, for 30 minutes.

Meatballs: in a bowl combine well the bread, squeezed, the chuck, the eggs, the romano, the parsley, the garlic, the oregano, the salt, and the pepper and form the mixture into 10 meatballs.

 In a large skillet brown the meatballs in the oil over high heat, turning them often.

Transfer the meatballs to the sauce with a slotted spoon and simmer the mixture, stirring occasionally, for 30 minutes.

The dish improves in flavour if it is cooled and chilled, covered, overnight or up to 2 days.

Caribbean Chicken Recipe - Continental Recipes


                                                  Caribbean Chicken Recipe

Preparation Time :  1 Hour    
Servings : 4 to 6

INGREDIENTS:

3 - 4 lbs chicken

1/2 - 2/3 cup oil

Escallion

Thyme

Green hot pepper (optional)

2 ripe plum tomatoes

2 tbsp seasoning salt

1/8 soy sauce

1 tsp garlic powder

Paprika

1/2 cup lemon juice (optional)

1 small onion

METHOD :

 Remove skin and any excess fat from chicken and wash parts in lemon juice. Drain lemon juice and add seasoning salt, garlic powder, soy sauce and paprika.

 Cut up onion and tomatoes and add. Using hands mix in the seasoning with the chicken. Let sit for at least 6 hours (preferably overnight).

 Heat oil in a pot. Scrape seasoning from chicken and place seasoning in the pot with oil. Let sit until pieces become brown. Turn over pieces as necessary until pieces ar browned all around. Continue until all pieces are browned. Drain oil.

 Add the chicken with the seasoning mixture. Add escallion and thyme.

 To oil that was drained from pot, add water to form a one cup mixture, then add to the pot.

  Let simmer for 20 minutes under medium flame. Add ketchup if  necessary to thicken gravy. This can be served with white rice or  rice and peas.

Gingered chicken salad - Chinese Recipe

Ingredients

    2 c Cooked chicken breast
    1⁄2 c Scallions
    1 c Snow Peas
    1 c Bean sprouts
    1 c Mushrooms
    2 T Low-sodium soy sauce
    2 T Ginger
    1 T Oil
    1⁄2 T Sesame oil
    1⁄3 c Lemon juice
    1 garlic
    1 bn Watercress

Method

    Place the chicken, scallions, peas, bean sprouts & mushrooms in a large bowl.
    Combine the soy sauce, ginger, oil, sesame oil, lemon juice & garlic and toss with the chicken  mixture.
    If desired, transfer to a bed of lettuce on a serving platter and arrange watercress around it.

Batter Fried Fish with Cheese Sauce - Seafood Recipe

             
                                                   Batter Fried Fish with Cheese Sauce

Recipe Servings : 4
Recipe Cook Time: 40 Minutes

Ingredients

    8 (750 gm) fish fillets

    1 Tbsp lemon juice

    1 tsp salt

    2 Tbsp all purpose flour for dusting

    Oil for deep-frying

    Chopped greens for garnish


    For the batter:

    1/2 cup (60 gm) all purpose flour

    1 Tbsp (15 gm) oil

    1/2 cup water

    1 egg, white only

    1 tsp salt or to taste


    For the sauce:

    2 cups (480 gm) milk

    2 Tbsp (15 gm) all purpose flour

    1 Tbsp oil

    1 tsp salt or to taste

    1/4 tsp powdered black pepper

    1 cup (120 gm) cheese, grated

Method

Marinate fish, lemon juice and salt for 5 minutes and wash off.

From the batter ingredients, mix together the flour, salt and oil. Add the water gradually, mix into a batter and keep aside.

Mix all the sauce ingredients together to make the cheese sauce. Keep aside.

Wash and wipe the fish dry. Dust lightly with flour, patting off any excess flour.

Heat oil for frying, and while it is heating, whip egg-white stiff and fold into the batter.

When oil is ready, dip the fish into the batter, shake off the excess and fry to a very light golden on both sides. Place it on an absorbent paper to drain off the excess fat.

Immediately before serving, fry the fish once again in hot oil, drain and arrange in a serving dish. Pour some of the hot cheese sauce over it (serving the rest of it on the side) and garnish with the greens.

Ingredients

    500 grams, any white firm flesh fish fillet (River sole or Sea bass)

    1 Tbsp white  flour (maida)

    Handful parsley finely chopped

    Oil for deep frying


  For the batter:

    1 tsp baking powder

    1 cup white flour (maida)

    1 egg (optional)

    1 cup soda water

    Salt and pepper to season

Method

Clean the fish under running water, pat dry and roll it in flour and parsley, keep aside

For the batter , in a clean bowl whisk together soda water, baking powder, egg, flour and the seasoning into smooth consistency
Heat the oil in wok/ deep pan

Now dip each piece of fish in batter, coating them well and gently place them into hot oil.
Fry on medium heat till golden

Serve with a wedge of lemon, Chips with salt and vinegar.
